Chili Lime Corn & Kale Salad

Ingredients

  • 2 tbsp olive oil
  • 1/2 -1 red onion thinly sliced
  • 4 cups fresh or canned corn
  • 2 cloves garlic chopped, or 2 tsp garlic powder
  • 2 tsp chili powder
  • 1/2 tsp salt or more to taste
  • 1/4 tsp ground black pepper or more to taste
  • 1/2 bunch kale de-stemmed, chopped
  • 2 tbsp lime juice or more to taste

Instructions

  • Heat olive oil in a large frying pan over medium heat.
  • Add sliced onions, corn, and garlic to the pan, and saute for 3-4 minutes.
  • Add spices (chili powder, salt, pepper) to the pan and stir.
  • Add kale and saute until the leaves begin to wilt and turn bright green.
  • Remove pan from heat.
  • Add lime juice and stir.
  • Self serve from the pan or transfer to a large serving dish.
